ABOUT THE PROGRAM
Born from the need to help more people experience the Texas beef industry, Raw Truth About Beef is an online experience designed to introduce culinary and health professionals to beef and the beef industry.
Stacey Mattinson, MS, RDN, LD specializes in nutrition communications based in the Austin, Texas area. She received her undergraduate degree in Dietetics from Brigham Young University and a master’s degree in Nutrition from Texas Woman’s University. She completed her Dietetic Internship at Texas Health Presbyterian Hospital Dallas. Afterwards, she worked in clinical nutrition and private practice before pursuing her passion for nutrition communications, where she can educate the public bite by soundbite. She has a particular interest in agriculture and serving as the bridge between agriculture and the consumer. Professionally, she has notably served as a Texas Academy of Nutrition and Dietetics State Media Representative and as Membership Chair, as well as Nominating Committee Member of the Nutrition Entrepreneurs Dietetics Practice Group, among other volunteer leadership roles. Personally, Stacey is a wife and mom and enjoys running, mountain and road biking, practicing yoga and anything adventurous in the great outdoors.
Michael Smith CEC, CCA, WCEC is a graduate of the Texas Culinary Academy / Le Cordon Bleu Austin, Texas. He is currently employed as Executive Chef of The Corpus Christi Yacht Club and serves as the Assistant Director of the local TCA Chefs of the Coastal Bend chapter as well as the Certification Chair for the American Culinary Federations Texas Chefs Association Chapter. He has worked in several different types of food service, from formal dining, healthcare, retail, catering, and remote logistical services. Growing up in South Texas, Michael spent several years working on his family’s cattle ranch. He is the proud father of two daughters and spends his leisure time hunting, fishing, and playing guitar.
